“okonomiyaki”is one of the foods I want you to try if you are travelling to Osaka. Its soul fold loved by both the Japanese, and foreign visitors.
Let’s have real traditional okonomiyaki at Hatsuse, a 70 year old restaurant!
Hatsuse was originally a Ryokan (hotel), so the tables are all separated, much like hotel rooms. You can enjoy okonomiyaki with your friends and family more intimately without any distractions from other patrons.

What so special about Hatsuse is that, their okonomiyaki dough is easy to make! The dough uses bonito and konbu broth, along with 4 different kinds of wheat flour. Its crust is crispy and chewy inside.
The instructions are available on the menu, but I would recommend attending their okonomiyaki workshop. The professional okonomiyaki cook not only teaches you how to make tasty okonomiyaki, but also tells you about its history. They have an English menu and English speaking staff, so please feel free to contact them.

For those who were born and raised in Osaka, the mixed menu would be their recommendation. I personally like the pork, squid, and shrimp versions too.
If you want a stuffed one, please try“Buta (pork) modern”. The combination of the thick noodles and pork is the best! You can choose any of the other ingredients such as, spring onions, cheese, sakura-ebi, or corn. Find your own taste for okonomiyaki!
